Chicken and Vegetable Curry
A delicious Asian curry with tender chicken, broccoli and carrots in a creamy coconut milk and spice sauce.

Ingredients
- 400 g Chicken
- 250 g Broccoli
- 200 g Carrots
- 400 ml Coconut milk
- 20 ml Olive oil
- 1 piece Onion
- 15 g Curry powder
- 5 g Salt
- 2 g Pepper
- 200 ml Water
Instructions
Step 1
Cut the chicken into cubes, peel and slice the onion, cut broccoli and carrots into small pieces.
Step 2
Heat the oil in the skillet and brown the chicken cubes for 4-5 minutes, set aside.
Step 3
In the same skillet, sauté the onion for 2 minutes, then add the curry and cook for 1 minute.
Step 4
Pour in the coconut milk and water, bring to a boil.
Step 5
Add the carrots and broccoli, then the chicken, and simmer for 10 minutes.
Step 6
Season with salt and pepper, serve hot with white rice or quinoa.
