Chicken and Broccoli Curry
A mild and savory Asian curry made quickly with coconut milk and spices: comforting and indulgent.

Ingredients
- 700 g Chicken
- 350 g Broccoli
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 1 piece Onion
- 2 tbsp Oil
- 200 ml Water
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the chicken into cubes and dice the onion.
Step 2
Heat the oil in a skillet and sauté the onion for 2 minutes, then add the curry paste.
Step 3
Add the chicken and sear for 5 minutes, stirring constantly.
Step 4
Pour in the coconut milk and water, then add the broccoli florets.
Step 5
Simmer covered for 12 minutes, until the chicken is cooked and the broccoli is tender.
Step 6
Season with salt and pepper, and serve with rice if desired.
