Chicken Curry with Apples and Broccoli
A mild and fruity curry where apple brings a subtle sweetness. Simply delicious with crispy broccoli, served over basmati rice.

Ingredients
- 500 g Chicken
- 200 g Apple
- 300 g Broccoli
- 400 ml Coconut milk
- 2 tbsp Curry powder
- 1 piece Onion
- 20 ml Oil
- 1 pinch Salt
- 250 g Basmati rice
- 500 ml Water
Instructions
Step 1
Cook the basmati rice according to package directions (about 15 minutes). Cut the chicken into cubes, mince the onion, dice the apple, and cut the broccoli into florets.
Step 2
Heat the oil in the pan and cook the chicken for 5 minutes until browned.
Step 3
Add the onion and curry powder. Cook for 2 minutes, stirring.
Step 4
Pour in the coconut milk and water. Add the apple and broccoli. Simmer for 10 minutes. Season to taste.
Step 5
Serve the curry over hot rice.
