Chicken Curry with Potatoes
A truly flavorful and aromatic homemade curry inspired by Indian cuisine, with a rich and creamy sauce.

Ingredients
- 400 g Chicken
- 300 g Potatoes
- 150 g Broccoli
- 200 ml Coconut milk
- 200 ml Water
- 2 tbsp Olive oil
- 2 tsp Curry powder
- 1 piece Onion
- 1 tbsp Fresh ginger
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the chicken into cubes, dice the potatoes, and mince the onion.
Step 2
Heat the oil in a Dutch oven and sear the chicken for 5 minutes.
Step 3
Add the onion and ginger, cook for 2 minutes.
Step 4
Add the curry powder and mix well.
Step 5
Pour in the water and coconut milk, add the potatoes. Simmer covered for 20 minutes.
Step 6
Add the broccoli and cook for an additional 8 minutes. Season with salt and pepper before serving.
