Thai-Style Chicken Curry with Olives and Rice
A simplified Thai curry with chicken thighs, olives, coconut milk, and warm spices. Served with white rice or pasta to your preference.

Ingredients
- 4 piece Chicken thighs
- 80 g Black olives
- 200 ml Coconut milk
- 1 piece Onion
- 2 clove Garlic
- 2 tsp Red curry powder
- 200 ml Water
- 2 tbsp Olive oil
- à volonté g Salt
- 150 g White rice
Instructions
Step 1
Peel and finely chop the onion and garlic.
Step 2
Cut the chicken thighs into medium-sized pieces.
Step 3
Heat the oil in a pan or wok and sauté the onion and garlic for 2 minutes.
Step 4
Add the curry powder and mix well, then add the chicken pieces and brown for 5 minutes.
Step 5
Pour in the coconut milk and water, add the olives, season with salt, and simmer covered for 15 minutes.
Step 6
Meanwhile, cook the rice according to package directions.
Step 7
Serve the chicken curry over rice.
