Chicken Curry with Vegetables
A fragrant and flavorful curry with tender chicken and seasonal vegetables, served hot and comforting.

Ingredients
- 400 g Chicken
- 200 g Carrot
- 200 g Potato
- 150 g Broccoli
- 400 ml Coconut milk
- 2 tsp Curry powder
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the chicken into cubes. Peel and cut the carrots and potatoes into cubes. Cut the broccoli into florets.
Step 2
Heat the oil in a Dutch oven over medium heat, then brown the chicken for 5 minutes.
Step 3
Add the curry powder and stir for 1 minute.
Step 4
Pour in the coconut milk and add the carrots and potatoes. Simmer for 12 minutes.
Step 5
Add the broccoli and cook for 4 more minutes. Season with salt and pepper.
