Chicken Curry with Vegetables and Rice
A flavorful and comforting Asian-style curry with tender chicken, carrots, and vegetables served over rice. A weeknight classic.

Ingredients
- 400 g Chicken
- 3 medium Carrots
- 200 g Broccoli
- 3 tsp Curry
- 250 g White rice
- 200 ml Coconut milk
- 1.5 l Water
- 2 tbsp Butter
- 1 pinch Salt
Instructions
Step 1
Cook the rice with 500ml of water according to package instructions.
Step 2
Cut the chicken into cubes and the carrots into batons. Cut the broccoli into florets.
Step 3
Sauté the chicken in a pan with butter for 5 minutes. Add the curry powder and mix well.
Step 4
Add the carrots and broccoli, then the coconut milk. Simmer for 15 minutes.
Step 5
Serve the curry over the rice. Season with salt to taste.
