Chicken Curry with Vegetables
A flavorful curry with spices, chicken, potatoes and broccoli, served with rice. A comforting dish inspired by Asian cuisine.

Ingredients
- 600 g Chicken
- 400 g Potato
- 200 g Broccoli
- 150 g Carrot
- 250 g Rice
- 400 ml Coconut milk
- 3 tbsp Curry powder
- 500 ml Water
- 2 cl Oil
- 5 g Salt
- 2 g Pepper
Instructions
Step 1
Prepare rice according to instructions. Cut the chicken into cubes, potatoes into dice, broccoli into florets, and carrots into sticks.
Step 2
Heat oil in a pot and sear the chicken for 5 minutes until golden.
Step 3
Sprinkle with curry powder, stir, and cook for 2 minutes to release the flavors.
Step 4
Add potatoes and carrots, pour in water and coconut milk. Simmer for 20 minutes.
Step 5
Add broccoli and cook for another 5 minutes. Season with salt and pepper.
Step 6
Serve the curry over white rice.
