Chicken Curry with Carrots and Broccoli
A flavorful and easy-to-make Asian curry. Tender chicken cooked in a creamy sauce with colorful vegetables.

Ingredients
- 400 g Chicken
- 200 g Carrots
- 200 g Broccoli
- 1 piece Onion
- 300 ml Coconut milk
- 2 tbsp Curry paste
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the chicken into cubes and chop the vegetables into pieces.
Step 2
Heat the oil in a pan and cook the chicken for 8 minutes until well browned.
Step 3
Add the onion and curry paste, cook for 2 minutes, stirring.
Step 4
Pour in the coconut milk and add the carrots and broccoli.
Step 5
Simmer for 15 minutes until the vegetables are tender.
Step 6
Season with salt and pepper. Serve with rice or pasta.
