Chicken Curry with Carrots and Broccoli
A simple and flavorful Asian curry rich in vegetables and protein. Served with white rice for a complete meal.

Ingredients
- 500 g Chicken
- 3 medium Carrot
- 0.5 head Broccoli
- 2 tbsp Curry powder
- 400 ml Coconut milk
- 1 medium Onion
- 2 clove Garlic
- 2 tbsp Oil
- 1 tsp Salt
- 0.5 tsp Pepper
Instructions
Step 1
Cut the chicken into cubes, carrots into sticks, and broccoli into florets. Chop the onion and garlic.
Step 2
Heat the oil in the skillet and brown the chicken for 5 minutes, then set aside.
Step 3
In the same skillet, sauté the onion and garlic for 2 minutes, then add the curry powder.
Step 4
Add the coconut milk, carrots, broccoli, and chicken. Simmer for 10 minutes.
Step 5
Season with salt and pepper, and serve hot with white rice.
