Chicken Curry with Carrots and Beets
A simple and mild curry featuring chicken, root vegetables, and a hint of spice. Served with basmati rice, it's an exotic everyday dish.

Ingredients
- 450 g Chicken
- 200 g Carrots
- 150 g Beets
- 2 clove Garlic
- 1 medium Onion
- 2 tsp Curry powder
- 200 ml Coconut milk
- 2 tbsp Oil
- 1 pinch Salt
- 200 g Basmati rice
Instructions
Step 1
Cut the chicken into cubes. Peel and cut the carrots and beets into sticks. Chop the garlic and onion.
Step 2
Heat the oil in a pot and sauté the onion and garlic for 2 minutes. Sprinkle with curry and mix.
Step 3
Add the chicken, carrots, and beets. Pour in the coconut milk and water. Bring to a boil.
Step 4
Cover and simmer over low heat for 20 minutes until fully cooked. Season to taste.
Step 5
Meanwhile, cook the rice according to package instructions. Serve the curry over the rice.
