Coconut Milk Chicken Curry
A savory and creamy Indian curry with broccoli and carrots. Served over plain white rice, it's truly delicious.

Ingredients
- 400 g Chicken
- 150 g Broccoli
- 100 g Carrot
- 400 ml Coconut milk
- 2 tbsp Oil
- 2 tsp Curry powder
- 1 pinch Salt
- 200 g White rice
Instructions
Step 1
Cook the rice in salted water according to package instructions. Set aside.
Step 2
Cut the chicken into chunks, break the broccoli into small florets, and slice the carrots into batons.
Step 3
Heat the oil in a pot, brown the chicken for 5 minutes. Sprinkle with curry powder and stir well.
Step 4
Add the coconut milk, vegetables, and salt. Simmer for 10-12 minutes until the chicken is cooked through and the vegetables are tender.
Step 5
Serve the curry over white rice.
