Chicken Curry with Coconut Milk and Rice
A mild and flavorful Indian curry with creamy coconut milk. Served with white rice, it's a restaurant-quality dish you can make at home.

Ingredients
- 700 g Chicken
- 3 piece Carrot
- 2 piece Potato
- 400 ml Coconut milk
- 250 g White rice
- 2 tbsp Curry powder
- 2 tbsp Oil
- 500 ml Water
- 1 tsp Salt
Instructions
Step 1
Cook the rice according to package directions. Cut the chicken into cubes and the vegetables into bite-sized pieces.
Step 2
Brown the chicken in hot oil in a Dutch oven for 5 minutes.
Step 3
Add the curry powder and stir for 1 minute to release the flavors.
Step 4
Pour in the coconut milk and water, add the vegetables. Cover and cook for 15 minutes.
Step 5
Season with salt. Serve over the rice.
