Coconut Chicken Curry
A savory Asian curry with tender chicken, carrots, and broccoli in a creamy coconut sauce. Serve with rice or noodles.

Ingredients
- 400 g Chicken
- 150 g Carrots
- 150 g Broccoli
- 2 tbsp Curry
- 400 ml Coconut milk
- 1 piece Onion
- 2 clove Garlic
- 1 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the chicken into cubes. Slice the onion and mince the garlic.
Step 2
Heat the oil in a saucepan and sauté the onion and garlic for 2 minutes.
Step 3
Add the chicken and curry, mix well, and cook for 5 minutes, stirring occasionally.
Step 4
Add the coconut milk and bring to a boil.
Step 5
Add the sliced carrots and broccoli florets. Simmer for 10-12 minutes.
Step 6
Season with salt and pepper. Serve with white rice or noodles.
