Curried Apples and Vegetables in Coconut Milk
A sweet and savory curry with apples, vegetables, and coconut milk. An exotic and comforting one-pot dish.

Ingredients
- 2 pieces Apple
- 1 piece Pear
- 400 ml Coconut milk
- 150 g Red lentils
- 2 pieces Carrots
- 1 piece Onion
- 2 cloves Garlic
- 1 tsp Ginger
- 2 tsp Curry
- 2 tbsp Oil
- 1 pinch Salt
- 200 ml Water
Instructions
Step 1
Slice the onion and garlic, cut carrots and apples into dice.
Step 2
Heat oil in a pot and sauté onion and garlic for 2 minutes.
Step 3
Add curry and ginger and sauté for 1 minute.
Step 4
Add carrots, lentils, water, and simmer for 15 minutes.
Step 5
Stir in apples, pear, and coconut milk. Cook for 10 more minutes.
Step 6
Adjust seasoning and serve with rice or pasta.
