Apple and Carrot Curry
A sweet and savory fusion curry with apples and carrots, served over rice. Exotic and indulgent, ready in 35 minutes.

Ingredients
- 400 g Carrots
- 300 g Apples
- 400 ml Coconut milk
- 2 tsp Curry powder
- 1 piece Onion
- 250 g White rice
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the rice according to package instructions.
Step 2
Peel and cut the carrots into sticks, dice the apples, and slice the onion thinly.
Step 3
Heat the oil in a skillet and sauté the onion for 2 minutes.
Step 4
Add the curry powder and cook for 1 minute.
Step 5
Add the carrots and apples, then pour in the coconut milk. Simmer for 10 minutes.
Step 6
Season with salt and pepper. Serve over the rice.
