Curry of Potatoes and Lentils
A simple yet flavorful Asian-inspired curry loaded with potatoes, lentils, and vegetables from your fridge. Serve hot for a satisfying meal.

Ingredients
- 400 g Potatoes
- 150 g Red lentils
- 2 piece Carrots
- 100 g Fresh spinach
- 3 tbsp Olive oil
- 2 tsp Curry powder
- 500 ml Water
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cube the potatoes and slice the carrots into rounds
Step 2
Heat the oil in a saucepan and cook the curry powder for 1 minute
Step 3
Add the potatoes, carrots, lentils, and water. Bring to a boil and simmer for 20 minutes
Step 4
Add the spinach, stir, and cook for 2 minutes. Season and serve
