Potato and Lentil Curry

Ingredients
- 500 g Potatoes
- 150 g Red lentils
- 2 piece Carrots
- 100 g Fresh spinach
- 3 tbsp Olive oil
- 600 ml Water or broth
- 2 tsp Curry powder
- à goût Salt
- à goût Pepper
- 200 ml Coconut milk
Instructions
Step 1
Peel and cut the potatoes and carrots into small cubes
Step 2
Heat the oil in a pan or pot and sauté the potato and carrot cubes for 5 minutes
Step 3
Add the curry powder and stir well for 1 minute
Step 4
Pour in the water or broth and lentils, bring to a boil
Step 5
Simmer for 15 minutes until the lentils and potatoes are cooked
Step 6
Add the coconut milk and spinach, cook for 3 more minutes
Step 7
Season to taste with salt and pepper, serve with white rice
