Curry of Potatoes and Carrots in Coconut Milk
A mild and flavorful curry inspired by Asian cuisine. Comforting and aromatic with simple spices.

Ingredients
- 600 g Potatoes
- 350 g Carrots
- 400 ml Coconut milk
- 1 piece Onion
- 2 tsp Curry powder
- 2 tbsp Olive oil
- 300 ml Water
- 1 tsp Salt
- 0.5 tsp Pepper
Instructions
Step 1
Cut the potatoes and carrots into regular cubes, finely mince the onion.
Step 2
Heat the oil in a saucepan and sauté the onion for 2 minutes.
Step 3
Add the curry powder and mix well for 1 minute.
Step 4
Add the potatoes, carrots, water and coconut milk.
Step 5
Season with salt and pepper, bring to a boil, then simmer for 20 minutes until tender.
Step 6
Serve hot, ideally with white or brown rice.
