Curry with Potatoes and Carrots
A mild and flavorful curry loaded with tender carrots and potatoes. Served over rice, it's a comforting and satisfying Asian dish.

Ingredients
- 600 g Potatoes
- 400 g Carrots
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 1 piece Onion
- 2 cloves Garlic
- 2 tbsp Oil
- 1 pinch Salt
- 200 ml Water
Instructions
Step 1
Cut potatoes and carrots into regular cubes. Chop onion and garlic.
Step 2
Heat oil in a pot, sauté onion and garlic for 2 minutes.
Step 3
Add curry paste, mix well, and cook for 1 minute.
Step 4
Add potatoes, carrots, coconut milk, and water. Simmer covered for 20 minutes.
Step 5
Season with salt and serve hot with white rice or noodles.
