Curry of Potatoes, Carrots, and Orange with Peanuts

Ingredients
- 500 g Potatoes
- 300 g Carrots
- 1.5 piece Oranges
- 30 ml Olive oil
- 15 g Flour
- 300 ml Water
- 3 tsp Curry powder
- 15 g Fresh ginger
- 100 g Peanuts
- 150 ml Coconut milk
- 5 g Salt
Instructions
Step 1
Cut potatoes and carrots into even cubes.
Step 2
Sauté the grated ginger in oil, then add the curry powder.
Step 3
Add the vegetables and lightly brown them.
Step 4
Pour the water and orange juice, then simmer for 20 minutes.
Step 5
Add the coconut milk and crushed peanuts, cook for 5 more minutes.
Step 6
Season and serve.
