Curry with Potatoes, Broccoli and Ham
A mild and flavorful Asian-style curry with potatoes, broccoli and ham. Served with white rice, it's a complete and satisfying meal in 35 minutes.

Ingredients
- 400 g Potatoes
- 300 g Broccoli
- 150 g Ham
- 400 ml Coconut milk
- 200 ml Water
- 2 tsp Curry powder
- 1 tbsp Olive oil
- 250 g White rice
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the white rice according to package directions (approximately 15-18 minutes). Set aside.
Step 2
Cut the potatoes into 1.5cm cubes and the ham into small pieces. Cut the broccoli into florets.
Step 3
Heat the oil in a pan or pot. Add the curry powder and sauté for 30 seconds.
Step 4
Add the potatoes, water and coconut milk. Bring to a boil and let simmer for 12 minutes.
Step 5
Add the broccoli and ham, then cook for an additional 8 minutes. Season with salt and pepper. Serve over rice.
