Potato and Vegetable Curry
A mild and delicious curry with potatoes, onions, carrots, and spices. Served with white or plain rice.

Ingredients
- 500 g Potatoes
- 1 piece Onion
- 200 g Carrot
- 200 ml Coconut milk
- 1.5 tsp Curry powder
- 15 ml Oil
- 1 pinch Salt
- 200 ml Water
Instructions
Step 1
Peel and dice the potatoes, onion, and carrot into small cubes.
Step 2
Heat the oil in a pan and sauté the onion for 2-3 minutes.
Step 3
Add the curry powder and cook for 1 minute, stirring.
Step 4
Add the potatoes, carrot, coconut milk, and water. Simmer for 20 minutes until tender.
Step 5
Season with salt to taste and serve hot.
