Potato and Carrot Curry
A simple and flavorful vegetarian curry inspired by Indian cuisine. Light yet comforting, served with bread.

Ingredients
- 400 g Potato
- 300 g Carrot
- 400 ml Coconut milk
- 2 tsp Curry powder
- 1 piece Onion
- 2 clove Garlic
- 20 ml Oil
- 200 ml Water
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and cut the potatoes and carrots into cubes. Mince the onion and garlic.
Step 2
Sauté the onion and garlic in oil in a pot or casserole for 2 minutes.
Step 3
Add the curry powder and mix for 1 minute.
Step 4
Add the potatoes, carrots, coconut milk, and water. Cover and simmer for 20 minutes over medium heat.
Step 5
Season with salt and pepper to taste. Serve hot with bread.
