Thai-Style Fish and Vegetable Curry
A flavorful and gently spiced curry with white fish, broccoli, and carrots. Served with rice for a complete and satisfying meal.

Ingredients
- 400 g White fish
- 250 g Broccoli
- 150 g Carrot
- 200 ml Coconut milk
- 200 ml Chicken broth
- 2 tbsp Red curry paste
- 1 tbsp Oil
- 200 g White rice
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the rice according to package instructions (about 15 minutes).
Step 2
Cut the fish into cubes, the broccoli into florets, and the carrot into sticks.
Step 3
Heat the oil in a pot and dissolve the curry paste by stirring for 1 minute.
Step 4
Add the coconut milk and broth, bring to a simmer.
Step 5
Add the vegetables and cook for 8 minutes, then add the fish and cook for 6-7 minutes.
Step 6
Season with salt and pepper, and serve the curry over hot rice.
