Fish Curry with Tomatoes and Rice
A flavorful and lightly spiced curry made with fish, tomatoes, and rice. A simple and satisfying Asian-inspired dish.

Ingredients
- 300 g Fish
- 250 g Tomatoes
- 150 g Rice
- 200 ml Coconut milk
- 1 piece Onion
- 1.5 tsp Curry powder
- 2 tbsp Oil
- 1 pinch Salt
Instructions
Step 1
Cook the rice according to the package instructions.
Step 2
Heat the oil in a pan. Sauté the chopped onion for 2 minutes.
Step 3
Add the curry powder and cook for 1 minute, then add the crushed tomatoes and coconut milk.
Step 4
Cut the fish into cubes and add to the sauce. Cook for 10-12 minutes until the fish is cooked through. Season to taste.
Step 5
Serve the curry over the hot rice.
