Fish Curry with Tomatoes and Rice
A mild and flavorful curry inspired by Asian cuisine, served with rice. Delicious yet easy to prepare with just a few basic spices.

Ingredients
- 400 g White fish
- 250 g Rice
- 300 g Tomatoes
- 100 g Carrots
- 100 ml Milk
- 2 tbsp Oil
- 1 tsp Curry powder
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the rice in a pot of boiling water for 18-20 minutes.
Step 2
Cut the fish into cubes, the tomatoes into chunks, and the carrots into thin sticks.
Step 3
Heat the oil in a Dutch oven or large skillet, add the curry and cook for 30 seconds.
Step 4
Add the carrots and tomatoes, cook for 5 minutes.
Step 5
Add the fish and milk, cover and simmer for 8-10 minutes until the fish is cooked through.
Step 6
Season with salt and pepper. Serve the curry over the rice.
