Fish Curry with Tomatoes and Cucumber
A light and flavorful curry made with white fish, tomatoes, and fresh vegetables. Exotic and easy to prepare, perfect served with rice.

Ingredients
- 400 g White fish
- 250 g Tomatoes
- 150 g Cucumbers
- 200 ml Coconut milk
- 2 tbsp Oil
- 2 tsp Curry powder
- 1 piece Onion
- à to taste Salt
- à to taste Pepper
Instructions
Step 1
Cut the fish into cubes, mince the onion, and dice the tomatoes and cucumber.
Step 2
Heat the oil in the pot over medium heat.
Step 3
Add the onion and cook for 2 minutes until translucent.
Step 4
Add the curry powder, stir, and cook for 1 minute.
Step 5
Pour in the coconut milk and tomatoes, bring to a simmer.
Step 6
Add the fish and let cook for 8-10 minutes until cooked through.
Step 7
Add the cucumber, season with salt and pepper, and cook for 2 minutes.
