Fish Curry with Vegetables and Coconut Milk
An easy Asian curry with white fish, carrots, and coconut milk. Comforting and delicious, best served with rice.

Ingredients
- 300 g White fish
- 2 piece Carrots
- 150 g Mushrooms
- 200 ml Coconut milk
- 1 piece Onion
- 2 clove Garlic
- 1.5 tbsp Oil
- 1.5 tsp Curry powder
- 150 ml Water
- à volonté Salt
- à volonté Pepper
Instructions
Step 1
Cut the fish into cubes, thinly slice the onion, and mince the garlic.
Step 2
Cut the carrots into sticks and the mushrooms into pieces.
Step 3
Heat the oil in a pot, sauté the onion and garlic for 2 minutes.
Step 4
Add the curry powder, stir, and cook for 1 minute.
Step 5
Add the carrots and mushrooms, cook for 5 minutes.
Step 6
Pour in the water and coconut milk, bring to a gentle simmer.
Step 7
Add the fish and cook for 10-12 minutes until cooked through.
Step 8
Season with salt and pepper, then serve with rice.
