Coconut Fish Curry
A delicious Asian curry with tender fish, vegetables and a creamy coconut sauce. Served over rice for a complete meal.

Ingredients
- 500 g Fish
- 200 g Carrot
- 200 g Broccoli
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 250 g White rice
- 1 piece Onion
- 2 tbsp Oil
- 500 ml Water
- à volonté pinch Salt
Instructions
Step 1
Cook the rice according to package instructions.
Step 2
Slice the onion and cut the vegetables into even pieces.
Step 3
Heat the oil in a pot and sauté the onion for 2 minutes.
Step 4
Add the curry paste and cook for 1 minute.
Step 5
Pour in the coconut milk and water, bring to a boil.
Step 6
Add the vegetables and cook for 8 minutes.
Step 7
Add the fish cut into pieces and cook for 5-7 minutes.
Step 8
Season with salt and serve over rice.
