Chickpea and Tomato Curry
A flavorful and protein-rich Indian curry with chickpeas, tomatoes and aromatic spices. Hearty and delicious served with rice.

Ingredients
- 400 g Canned chickpeas
- 400 g Canned tomatoes
- 1 piece Onion
- 2 cloves Garlic
- 2 tsp Curry powder
- 200 ml Coconut milk
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Mince the onion and garlic.
Step 2
Heat the oil in a pot and sauté the onion and garlic for 3-4 minutes.
Step 3
Add the curry powder and stir for 1 minute.
Step 4
Add the drained chickpeas, canned tomatoes and coconut milk.
Step 5
Simmer for 15-20 minutes over medium heat. Season with salt and pepper.
