Chickpea and Basmati Rice Curry
A hearty Indian curry loaded with protein from chickpeas and aromatic basmati rice. Comforting and exotic comfort food for the whole family.

Ingredients
- 250 g Basmati rice
- 400 g Canned chickpeas
- 1 medium Onion
- 400 g Canned tomatoes
- 200 ml Coconut cream
- 2 tsp Curry powder
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the basmati rice in water according to package instructions.
Step 2
Thinly slice the onion and sauté it in hot oil for 2-3 minutes.
Step 3
Add the curry powder and mix well, cook for 1 minute.
Step 4
Add the canned tomatoes and drained chickpeas, mix well.
Step 5
Pour in the coconut cream and simmer for 10 minutes, stirring occasionally.
Step 6
Season with salt and pepper to taste, serve the curry over the rice.
