Chickpea and Rice Curry
A savory vegetarian curry with chickpeas, carrots and white rice. A complete, satisfying dish with a gentle spice.

Ingredients
- 250 g White rice
- 400 g Canned chickpeas
- 300 g Carrots
- 1 medium Onion
- 400 ml Coconut milk
- 2 tbsp Oil
- 2 tsp Curry powder
- 2 clove Garlic
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the white rice according to package instructions (approximately 15-18 minutes).
Step 2
Meanwhile, peel and dice the carrots, mince the onion and garlic.
Step 3
Heat the oil in a dutch oven, sauté the onion and garlic for 2 minutes.
Step 4
Add the curry powder, stir well and cook for 1 minute.
Step 5
Add the carrots, drained chickpeas and coconut milk. Simmer for 15 minutes.
Step 6
Season with salt and pepper. Serve the curry over the rice.
