Chickpea and Rice Curry
A savory vegetarian curry with chickpeas, rice and warm spices. Comforting and ready in 30 minutes.

Ingredients
- 200 g Rice
- 400 g Canned chickpeas
- 1 piece Onion
- 2 piece Tomato
- 200 ml Coconut milk
- 2 tsp Curry powder
- 3 cl Oil
- 400 ml Water
- 5 g Salt
- 2 g Pepper
Instructions
Step 1
Bring salted water to a boil for the rice and cook covered for 12-15 minutes.
Step 2
Peel and mince the onion finely.
Step 3
Sauté the onion in hot oil in a Dutch oven for 3-4 minutes.
Step 4
Add the curry powder and stir for 30 seconds.
Step 5
Add the roughly chopped tomatoes, drained chickpeas and coconut milk.
Step 6
Simmer for 10-12 minutes, season with salt and pepper.
Step 7
Serve the curry with hot rice.
