Chickpea and Apple Curry
A light and sweet-savory Indian curry with tender chickpeas and cooked apples. Served over a bed of semolina for added richness. Savory and exotic.

Ingredients
- 400 g Canned chickpeas
- 200 g Apples
- 150 g Semolina
- 200 ml Coconut milk
- 1 piece Onion
- 2 clove Garlic
- 2 tsp Curry powder
- 200 ml Water
- 2 tbsp Oil
- à volonté g Salt
- à volonté g Pepper
Instructions
Step 1
Bring water to a boil for the semolina. Mix it with 1 tsp of salt and let sit covered for 5 minutes.
Step 2
Heat the oil in a skillet. Sauté the finely chopped onion for 2 minutes, then add the minced garlic.
Step 3
Sprinkle with curry powder and stir well for 1 minute to release the flavors.
Step 4
Add the drained chickpeas, diced apples, and coconut milk. Pour in 200 ml of water.
Step 5
Simmer for 15 minutes. Season with salt and pepper to taste.
Step 6
Serve the curry over the hot semolina.
