Chickpea and Vegetable Curry
A rich and satisfying curry featuring chickpeas, onions, tomatoes, and aromatic spices. Served with rice or bread, it's a complete vegetarian meal.

Ingredients
- 400 g Canned chickpeas
- 1 piece Onion
- 400 g Canned tomatoes
- 200 ml Coconut milk
- 2 tsp Curry powder
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Finely mince the onion.
Step 2
Sauté the onion in oil over medium-high heat for 3-4 minutes.
Step 3
Add the curry powder and stir for 1 minute to bloom the spices.
Step 4
Pour in the canned tomatoes and drained chickpeas, then add the coconut milk.
Step 5
Simmer over medium heat for 15-20 minutes, season to taste, and serve.
