Chickpea and Carrot Curry
A simple and flavorful Indian curry with chickpeas and vegetables. Served with bread or rice, it's a complete and comforting meal.

Ingredients
- 4 piece Carrots
- 2 stalk Celery stalks
- 3 cl Olive oil
- 400 g Canned chickpeas
- 400 ml Coconut milk
- 2 tsp Curry powder
- 1 piece Onion
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Slice the carrots into rounds and cut the celery into chunks.
Step 2
Chop the onion and sauté it in oil in a large pot.
Step 3
Add the curry powder and stir well to coat everything.
Step 4
Add the carrots, celery, and drained chickpeas.
Step 5
Pour in the coconut milk, season with salt and pepper, and simmer for 15 minutes.
Step 6
Serve hot with bread or rice.
