Chickpea and Carrot Curry
A flavorful Indian curry made with chickpeas and carrots. Rich in taste and protein, served with rice or pasta.

Ingredients
- 2 pieces Carrot
- 400 g Chickpeas (canned)
- 200 ml Coconut milk
- 1 piece Onion
- 2 tsp Curry powder
- 1 tbsp Oil
- à volonté pinch Salt
Instructions
Step 1
Peel and dice the carrots into small cubes, finely chop the onion.
Step 2
Heat the oil in a pan and sauté the onion for 2 minutes.
Step 3
Add the curry powder and cook for 1 minute to release the flavors.
Step 4
Add the diced carrots and cook for 8 minutes, then add the drained chickpeas.
Step 5
Pour in the coconut milk and simmer for 8 minutes until the carrots are tender.
Step 6
Season with salt and serve hot.
