Chickpea and Broccoli Curry
A savory vegetarian Indian curry with chickpeas, broccoli and cauliflower in a creamy sauce. Serve with rice or naan bread.

Ingredients
- 200 g Canned chickpeas
- 250 g Broccoli
- 200 g Cauliflower
- 2 tsp Curry powder
- 200 ml Coconut milk
- 200 ml Water
- 1 piece Onion
- 1.5 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Dice the onion and sauté it in oil in a saucepan for 2 minutes.
Step 2
Add the curry powder and mix well, cook for 1 minute.
Step 3
Cut the broccoli and cauliflower into small florets and add them to the saucepan.
Step 4
Pour in the coconut milk and water, mix well.
Step 5
Add the drained chickpeas and simmer for 15 minutes.
Step 6
Season with salt and pepper to taste, serve hot.
