Chickpea and Olive Curry
A flavorful and spiced curry with chickpeas and olives. Served over rice or with bread, it's a complete and satisfying meal.

Ingredients
- 400 g Canned chickpeas
- 120 g Green olives
- 400 g Canned tomatoes
- 1 piece Onion
- 2 clove Garlic
- 2 tsp Curry powder
- 2 tbsp Olive oil
- 200 ml Water
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Slice the onion and chop the garlic.
Step 2
Heat the oil in a pot and sauté the onion and garlic for 3 minutes.
Step 3
Add the curry powder and stir for 1 minute to incorporate well.
Step 4
Pour in the canned tomatoes and water, mix well.
Step 5
Drain the chickpeas and add to the sauce with the olives.
Step 6
Simmer covered for 15 minutes. Season with salt and pepper.
