Curry of Pears and Apples with Coconut Milk
A sweet and savory Asian curry with fruit, coconut milk, and spices. Served over rice, it's a complete and original meal.

Ingredients
- 2 piece Apple
- 2 piece Pear
- 400 ml Coconut milk
- 1 piece Onion
- 2 tsp Curry powder
- 10 g Fresh ginger
- 2 clove Garlic
- 200 g White rice
- 30 ml Oil
- à goût Salt and pepper
Instructions
Step 1
Begin cooking the rice according to instructions. Meanwhile, thinly slice the onion, ginger, and garlic.
Step 2
Heat oil in a pan and sauté onion, ginger, and garlic for 2 minutes. Add curry and mix for 1 minute.
Step 3
Peel, core, and cut apples and pears into pieces. Add them to the pan and cook for 3 minutes.
Step 4
Pour in the coconut milk and bring to a simmer. Cook for 10-12 minutes over medium heat until the fruit is tender.
Step 5
Season with salt and pepper. Serve the curry over hot rice with fresh cilantro leaves if available.
