Leek and Ham Curry with Chickpeas

Ingredients
- 4 pieces Leeks
- 150 g Ham
- 400 g Canned chickpeas
- 200 ml Coconut milk
- 2 tsp Curry powder
- 1 piece Onion
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Slice the leeks into rounds and dice the onion into small pieces.
Step 2
Sauté the onion in hot oil for 2 minutes in a pot.
Step 3
Add curry powder and stir for 1 minute.
Step 4
Add the leeks and cook for 5 minutes, stirring occasionally.
Step 5
Pour in the coconut milk, add the drained chickpeas and diced ham. Simmer for 8 minutes. Season with salt and pepper. Serve hot.
