Curry Pasta with Shrimp and Coconut Milk

Ingredients
- 200 g Penne
- 250 g Shrimp, peeled
- 200 ml Coconut milk
- 1 piece Onion
- 2 clove Garlic
- 2 tsp Curry powder
- 3 tbsp Oil
- 200 ml Vegetable broth
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Bring salted water to a boil and cook the penne according to package directions.
Step 2
Meanwhile, mince the onion and garlic.
Step 3
Heat the oil in a wok and sauté the onion and garlic.
Step 4
Add the curry powder and cook for 1 minute.
Step 5
Pour in the broth and coconut milk, simmer for 5 minutes.
Step 6
Add the shrimp and cook for 3-4 minutes until they turn pink.
Step 7
Drain the pasta and toss it with the curry sauce.
