Curried Pasta with Spinach
An easy Asian-inspired curry with pasta, spinach, and a gently spiced sauce. Comforting and delicious without complicated preparation.

Ingredients
- 200 g Pasta
- 250 g Spinach
- 200 ml Coconut milk
- 2 tbsp Red curry paste
- 1 medium Onion
- 2 clove Garlic
- 2 tbsp Oil
- 1 pinch Salt
Instructions
Step 1
Cook the pasta al dente according to package directions, then drain.
Step 2
Sauté the thinly sliced onion and garlic in oil over medium-high heat for 2 minutes.
Step 3
Add the curry paste and stir well, then gradually pour in the coconut milk.
Step 4
Add the spinach and cook for 5 minutes until completely wilted.
Step 5
Combine the pasta with the curry sauce, stir well, season to taste, and serve hot.
