Coconut Curry with Potatoes, Broccoli, and Cauliflower
A rich and flavorful Asian curry combining fresh vegetables in a creamy coconut sauce, seasoned with exotic spices and finished with a touch of lime for balance.
Ingredients
- 300 g Potato
- 250 g Broccoli
- 250 g Cauliflower
- 400 ml Coconut milk
- 1 piece Onion
- 3 cloves Garlic
- 15 g Ginger
- 2 tsp Curry powder
- 1 tsp Turmeric
- 1 piece Lime
- 2 cl Oil
- 1 pinch Salt
- 1 pinch Pepper
- 10 g Fresh cilantro
Instructions
Step 1
Cut the potatoes into cubes, and the broccoli and cauliflower into florets. Mince the onion, garlic, and ginger.
Step 2
Heat the oil in a pot and sauté the onion, garlic, and ginger for 3 minutes.
Step 3
Add the curry powder and turmeric, cook for 1 minute while stirring to release the aromas.
Step 4
Add the potatoes, pour in the coconut milk and 200ml of water. Cook for 15 minutes.
Step 5
Add the broccoli and cauliflower, cook for another 10 minutes until tender.
Step 6
Season with salt, pepper, and lime juice. Sprinkle with fresh cilantro and serve.
