Red Lentil Curry with Apples and Spinach

Ingredients
- 250 g Red lentils
- 2 piece Apples
- 150 g Fresh spinach
- 2 piece Carrots
- 700 ml Water
- 2 tbsp Olive oil
- 2 tsp Curry powder
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and dice the carrots and cut the apples into cubes.
Step 2
Heat the oil in a saucepan and toast the curry powder for 1 minute.
Step 3
Add the lentils, carrots, and apples, then cover with water.
Step 4
Bring to a boil and simmer for 20 minutes until lentils are tender.
Step 5
Add spinach, let it wilt for 2 minutes, then season with salt and pepper.
