Red Lentil Curry with Apples and Carrots
A simple yet flavorful Indian curry with a touch of sweetness from the apples. A warm and satisfying dish.

Ingredients
- 200 g Red lentils
- 2 piece Carrots
- 1 piece Apples
- 100 g Fresh spinach
- 200 ml Coconut milk
- 300 ml Water
- 2 tbsp Olive oil
- 1.5 tsp Curry powder
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and slice the carrots into rounds, and cut the apples into cubes.
Step 2
Heat the oil in a pot, add the curry powder and cook for 1 minute.
Step 3
Add the carrots and apples, cook for 3 minutes.
Step 4
Add the lentils, water, and coconut milk. Bring to a boil.
Step 5
Reduce heat and simmer for 15 minutes until the lentils are tender.
Step 6
Add the spinach, cook for 2 minutes, season with salt and pepper. Serve.
