Red Lentil Curry with Coconut Milk
A mild and flavorful curry with red lentils, carrots, and coconut milk. Served with rice or pasta for an everyday exotic meal.

Ingredients
- 200 g Red lentils
- 3 piece Carrots
- 400 ml Coconut milk
- 300 ml Water
- 1 piece Onion
- 2 tbsp Olive oil
- 1.5 tsp Curry powder
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and thinly slice the onion. Sauté it in a skillet with the oil for 3 minutes.
Step 2
Add the curry powder and stir for 1 minute to release its aromas.
Step 3
Cut the carrots into small pieces and add them to the skillet. Sauté for 5 minutes.
Step 4
Add the red lentils, coconut milk, and water to the skillet.
Step 5
Bring to a boil then simmer for 20 minutes until the lentils are tender and the curry has thickened.
Step 6
Season with salt and pepper. Serve hot with rice or pasta.
