Red Lentil and Coconut Curry
A flavorful and creamy Indian curry with soft red lentils and an exotic touch of coconut milk and spices.

Ingredients
- 250 g Red lentils
- 2 piece Carrots
- 150 g Spinach
- 200 g Potatoes
- 400 ml Coconut milk
- 300 ml Water
- 20 ml Oil
- 15 g Curry powder
- 8 g Salt
- 2 g Pepper
Instructions
Step 1
Cut the carrots and potatoes into small dice. Heat the oil in the pot.
Step 2
Add the curry powder and mix quickly (30 seconds) to infuse the oil.
Step 3
Add the carrots and potatoes, cook for 5 minutes, stirring.
Step 4
Pour in the red lentils, water, and coconut milk. Bring to a boil.
Step 5
Reduce heat and simmer for 15 minutes until the lentils and vegetables are tender.
Step 6
Add the spinach and cook for 2 minutes. Season with salt and pepper, then serve.
