Indian-Style Red Lentil Curry
A mild and flavorful Indian curry with red lentils, onion, tomato and spices. Comforting and indulgent, served hot with a touch of coconut cream for extra richness.

Ingredients
- 200 g Red lentils
- 1 piece Onion
- 200 g Canned or fresh tomato
- 600 ml Water
- 2 tbsp Olive oil
- 2 tsp Curry powder
- 1 tsp Turmeric
- 100 ml Coconut cream
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Mince the onion and sauté it in oil in a pot for 3 minutes.
Step 2
Sprinkle the curry powder and turmeric, stir for 1 minute to infuse the oil.
Step 3
Add the rinsed lentils and tomato, then pour in the water.
Step 4
Bring to a boil and simmer for 18-20 minutes until the lentils are cooked.
Step 5
Stir in the coconut cream, season with salt and pepper, and serve hot.
